Indian Slow Cooker: 50 Healthy, Easy, Authentic Recipes by Anupy Singla

This has been my favorite Indian cookbook since it came out two years ago, but just this week I put it to the ultimate test. Monday night I cooked dinner for three Afghani gentlemen and their interpreter and I offered three dishes from this cookbook (plus rice and grilled salmon that I managed myself). I cooked “Spiced Cauliflower and Potatoes”, “Ginger-Garlic Eggplant” and for dessert, “Carrot Halwa”. I thought that everything tasted pretty good, but my guests loved everything – they had seconds, and thirds on the dessert! Everything was halal, and tasted like home cooking to these visitors. I didn’t even know what Carrot Halwa was supposed to taste like, and one guest said that it was better than his wife’s version! How could you not like and trust this cookbook?

    Ginger-Garlic Eggplant is one of my favorites from this book!
